Apricots

The apricot is the “little ray of yellow sunshine” among the sweet stone fruits. While peaches and nectarines are often very juicy, the fruit of the apricot tends to be soft and mealy, making it easier to eat.

With 280 mg of potassium, 0.7 mg of iron, and 1.6 mg of provitamin A (carotene) per 100 g, the apricot delivers a wealth of nutrients. The body can transform carotene into vitamin A, which plays an important role in cell growth as well as skin and eye health.

Apricots also contain vitamins B1 and B2, vitamin C, calcium, and phosphorus. These substances are essential for carbohydrate metabolism, energy metabolism, the immune system, and for the teeth and bones.
