Plant-based Walnut Cheese

The challenge

The aim was to develop a plant-based cheese alternative that offers healthy omega-3 fatty acids and is ideal for use on pizza, as it has a melting quality.

Solution

The walnuts used provide this application with the desired nutritional values and a healthy image. Locust bean gum and xanthan gum were added to the recipe to improve the melting properties.
