Plant-based Walnut Cheese

Challenge

The goal was to develop a plant-based cheese alternative that provides healthy omega-3 fatty acids and is ideal for use on pizza due to its meltability.

Solution

The walnuts used in this product provide the desired nutritional value and a healthy image. Locust bean gum and xanthan gum were added to the recipe to improve meltability.
