Information

Tara gum is made from the seeds of the tara shrub, which is only found in Peru. In Switzerland, the seeds of the endosperm are processed into tara gum. Tara gum has a higher viscosity range than standard guar gum and locust bean gum. The hot viscosity range is around 6000 Mpas and the cold viscosity range is between 2500-3500 mpas. Within these viscosity ranges, the hydrocolloid normally masks the taste due to its long chains. The advantage of Tara Gum is the very good taste release, the mouthfeel and the simultaneous realization of a high viscosity.
