Tara Gum is made from the seeds of the Tara bush, found only in Peru. In Switserland the seeds of the endosperm are further processed to Tara Gum. Tara Gum has a higher viscosity range than the standard Guar Gum and Locust Bean Gum. The hot viscosity range is about 6000 Mpas and the cold viscosity range between 2500-3500 mpas. Normally within these viscosity range the hydroclloid masks flavor due to it’s long chains. The advantage of Tara Gum is the very good flavor release, mouthfeel and in the mean time realizing a high viscosity.
